Cottage Cheese
  1. Whip cottage cheese, honey, and vanilla paste in food processor on high till smooth and fluffy.
Salad
  1. Slice cucumber, shallot, and fennel super thin on a mandolin. Combine sugar, salt, vinegar, garlic and dill in bowl and stir. Put in fridge and allow to sit at least 15 min.
Serve
  1. Stir salad and plate cucumber salad over whipped cheese. Top with roasted pistachios. Garnish with fennel fronds and drizzle with olive oil.
