- 8 oz cottage cheese
- 1 tbl honey
- 1/4 tsp vanilla paste
Salad
- 1/2 English cucumber
- 1/2 shallot
- 1/8 fennel bulb
- 2 pinch sugar
- 3 pinch salt
- 1 oz rice vinegar
- 1 garlic clove minced
Garnish
- 1/4 cup pistachios roasted
- 1 tsp dill chopped
- 1 tsp olive oil extra virgin

Cottage Cheese
- Whip cottage cheese, honey, and vanilla paste in food processor on high till smooth and fluffy.
Salad
- Slice cucumber, shallot, and fennel super thin on a mandolin. Combine sugar, salt, vinegar, garlic and dill in bowl and stir. Put in fridge and allow to sit at least 15 min.
Serve
- Stir salad and plate cucumber salad over whipped cheese. Top with roasted pistachios. Garnish with fennel fronds and drizzle with olive oil.
